Ingredients
1 lbs. dry pinto beans
5 cups water
1 chopped onion
1 1/2 teaspoons cumin
1 teaspoon onion powder
1 teaspoon oregano
Salt to taste
Preparation
Step 1
Sort beans and soak in 10 cups of water overnight. Alternatively, bring beans a boil, turn off heat, and let it sit for 1 hour.
Step 2
After the beans have soaked, add remaining ingredients and bring to a boil. Simmer on low heat for about 1 1/2 hours or until tender. Optional: during the last 15 minutes of cooking add 1 cup tomato sauce.
Note:
To help reduce gastrointestinal distress, drain off the water after beans are soaked and add fresh water 1 inch above soaked beans.
